Maria’s Chicken Chili


  • 4 cups chopped yellow onions (3 onions)
  • 1/4 cup Altomonte’s extra virgin olive oil
  • 2 red bell peppers, cored, seeded, and large-diced
  • 2 yellow bell peppers, cored, seeded, and large-diced
  • 1 green bell pepper, cored, seeded, and large-diced
  • 2 Jalapenos, cored, seeded and chopped
  • 1 can Cannellini beans
  • 1 can black beans
  • 1 can red kidney beans
  • 3 tablespoons chili powder, or more to taste



chickenchiliIn a large pot, cook the onions in enough olive oil to coat the bottom of pan, over medium-low heat for 10 to 15 minutes, until translucent. Add a little more oil to the pan and add the chicken breast cubes, allow to brown on all sides. Add the peppers, chili powder & salt. Cook for a few more minutes. Add the broth & salsa. Bring to a boil, and then add all the beans with liquid. Reduce the heat and simmer, uncovered, for 30 minutes, stirring occasionally. Adjust salt, pepper & chili powder to taste.

  • 3 lbs. fresh chicken breasts, bite sized cubes
